The first time I smelled fish sauce, I thought someone had squeezed a rotten fish, shoved it in the bottle and topped it with water. (Actually, I wasn’t far off the mark, except for the rotten part.) If the empty bottle wasn’t really thoroughly cleaned, every cat and raccoon in the neighbourhood would camp out in my recycling box.

Now? A bottle must always be in my fridge for every rice noodle fry or Thai soup that’s wanting to be made. It keeps company with the other jars and bottles of things that were at one-time disagreeable, like chilli garlic paste, Maggi and puréed ginger.

Anyone else have things like that hanging around their pantries?
